About a month or so ago, I was contacted by Weight Watchers Cheese and asked to review a few of their new products, as part of the “Swap It Challenge”. The idea is simply to use these Weight Watchers Cheese products in place of any of my usual cheese products in various recipes. I must say, I was a bit hesitant at first, since our family has worked on becoming virtually dairy-free over the past several months, but I decided we could try them out on food we share with others, since this is the holiday season after all! We have used and enjoyed many products from Weight Watchers in the past, so please know we wouldn’t make this exception for just anyone!
Here is my first ever vlog, showing you my first attempt at “swapping” the Weight Watchers Cheese. Enjoy! {And look below for the recipe I mention in the video!}

The result? The cream-style corn was a hit with our friends at Thanksgiving dinner! It is by far the easiest recipe I have ever used for homemade cream-style corn, and it’s pretty much a no-fail recipe. I have to tell you though – the added flavor from the Onion and Chive Cream Cheese was fabulous! It was rich and creamy, but not too strong! Perfect!
In the interest of full disclosure, however, I have to say that I was a bit nervous for a while. As you will see in the recipe below, the corn has to cook in the slow cooker for 2-3 hours. Usually by the end of the first hour, the cream cheese has begun to melt and is easily stirred into the other ingredients. The Weight Watchers cream cheeses, though, took much longer to soften and melt down into the mixture, and I was afraid I would be serving lumpy cream-style corn to our friends! Much to my delight, by the time we served the meal, the cream cheese and corn had blended beautifully, and was super yummy! Whew!
Crockpot Cream Style Corn
2 bags frozen whole kernel corn {about 2 pounds}
12 oz Cream Cheese, cubed {I used 8 oz of Weight Watchers Plain Cream Cheese, plus about 4 oz of the Onion and Chive Whipped Cream Cheese}
1/2 cup Butter, melted
1 cup milk
Salt & Pepper, to taste
2 teaspoons sugar
Spread corn over bottom of 3-to4-quart slow cooker. Top with cream cheese cubes. In a small bowl, stir together remaining ingredients; pour over corn and cream cheese. Cover; cook on High heat setting for between 2 to 3 hours.
Stir well before serving. Corn will hold on low heat setting up to 2 hours; stir occasionally.

It was the first time we had actually used WW Cream Cheese in a recipe, although we have reviewed some of their spreads in the past. It was definitely very yummy and quite the crowd-pleaser!
