In recent years, my husband and I have developed a taste for many of the more Asian or Indian types of food! Our newest favorite is any recipe in which we can use curry! I buy the actual boxed sauce mix called “Golden Curry” – you can find it in the Asian or ethnic food aisle in just about any grocery store. What I love about this particular mix is that it has so many possibilities! If we are in the mood for something a bit spicier, I simply use the hotter version of the sauce mix with some chicken, black beans, and rice… and voila… we have a relatively simple Indian flavored meal.
While visiting family this week, I introduced them to this sauce mix and prepared it a bit more on the Thai side of the menu. Because Thai food is most often peanut based and a bit sweeter, I cooked a large supply of the Jasmine long grain rice. Our kiddos really love the Jasmine rice because of its naturally sweet flavor! I also used the mild version of the Golden Curry sauce mix, along with sauteed chicken tenders (cut into small cubes), yellow and green peppers, baby carrots, some onion flakes, and pineapple chunks. Yummo!
To top it all off, this curry blend smells absolutely divine while it’s cooking! Between the wonderful aroma and the sweet and tangy flavors, this dish was a huge hit and certainly worked well for us!

Oh, that is a good curry!
I have usually made my own, but I have tried that one several times by others who made it.
Phil and I both love curry! We haven’t tried Golden Curry…I”ll have to look for it at the store next time I go!
